- 2 lbs Yukon Gold potatoes, peeled and cubed
- 1/4 cup mayonnaise
- 2 tbsp Jamaican jerk seasoning
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted water until fork-tender, about 12-15 minutes.
- Mix the mayonnaise and jerk seasoning in a large mixing bowl and let rest.
- Drain the potatoes and cool for at least 15 minutes.
- Combine the potatoes, red onion, and parsley into the mayo mixture, folding gently to incorporate.
