Deliciously refreshing Key Lime Pie Bars with a creamy filling and a crumbly graham cracker crust.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 2 (14-ounce) cans sweetened condensed milk
- ¾ cup fresh key lime juice
- 4 large egg yolks
- Zest of 2 key limes
- Whipped cream (for serving)
- Lime wedges (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar.
- Form the crust: Press the crumb mixture into the bottom of a greased 9×9-inch baking dish.
- Make the filling: In another bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest.
- Pour and spread the filling over the crust.
- Bake for 20-25 minutes until the filling is set but slightly jiggly in the center.
- Cool at room temperature for about 30 minutes before transferring to the fridge to chill for at least 2 hours.
- Serve cut into squares, topped with whipped cream and a lime wedge.
Notes
These bars keep well in the fridge for up to 5 days. They can also be frozen for up to 3 months.
