Description

Deliciously refreshing Key Lime Pie Bars with a creamy filling and a crumbly graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 2 (14-ounce) cans sweetened condensed milk
  • ¾ cup fresh key lime juice
  • 4 large egg yolks
  • Zest of 2 key limes
  • Whipped cream (for serving)
  • Lime wedges (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar.
  3. Form the crust: Press the crumb mixture into the bottom of a greased 9×9-inch baking dish.
  4. Make the filling: In another bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest.
  5. Pour and spread the filling over the crust.
  6. Bake for 20-25 minutes until the filling is set but slightly jiggly in the center.
  7. Cool at room temperature for about 30 minutes before transferring to the fridge to chill for at least 2 hours.
  8. Serve cut into squares, topped with whipped cream and a lime wedge.

Notes

These bars keep well in the fridge for up to 5 days. They can also be frozen for up to 3 months.
