Description

A delightful Loaded Potato Taco Bowl with crispy roasted potatoes, seasoned ground meat, and topped with fresh toppings for a hearty meal.


Ingredients

  • 2 large potatoes, diced
  • 1 lb ground beef or turkey
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or nacho blend)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil, then season with salt and pepper.
  3. Spread the potatoes evenly on a baking sheet.
  4. Roast in the oven for 25-30 minutes, flipping halfway through.
  5. Brown the ground meat in a skillet over medium heat, breaking it apart.
  6. Sprinkle in chili powder, cumin, salt, and pepper; cook until fully browned.
  7. Layer crispy roasted potatoes in bowls, followed by ground meat, black beans, corn, and tomatoes.
  8. Finish each bowl with cheese, lettuce, and avocado slices.
  9. Serve immediately and enjoy!
