Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced potatoes in olive oil, then season with salt and pepper.
- Spread the potatoes evenly on a baking sheet.
- Roast in the oven for 25-30 minutes, flipping halfway through.
- Brown the ground meat in a skillet over medium heat, breaking it apart.

- Layer crispy roasted potatoes in bowls, followed by ground meat, black beans, corn, and tomatoes.
