- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- Salt & pepper (to taste)

Instructions
- Marinate the Steak: In a mixing bowl, combine 3 tablespoons of olive oil, 2 minced garlic cloves, 1 tablespoon of fresh lemon juice, 1 teaspoon dried oregano, 1 teaspoon dried thyme, and a sprinkle of salt and pepper. Coat the sirloin steak with this flavorful mixture. Allow it to marinate for at least 30 minutes, ideally up to 4 hours.
- Prepare the Tzatziki Sauce: In a separate bowl, mix together the plain Greek yogurt, grated cucumber (squeezed dry), a tablespoon of fresh lemon juice, a minced garlic clove, and chopped dill. Season with salt and pepper to taste. Chill this refreshing sauce in the fridge while your steak marinates.
- Make the Vinaigrette: Whisk together 3 tablespoons of olive oil, 2 tablespoons of fresh lemon juice, 1 teaspoon of honey, a minced garlic clove, and a pinch of oregano in a small bowl. Set it aside.
- Cook the Steak: Heat a non-stick skillet over medium-high heat. Once hot, sear the steak for 4-5 minutes on each side until it achieves a golden brown crust. Allow the steak to rest for about 5 minutes before slicing it thinly.
- Assemble the Bowl: Layer your choice of cooked grains in the bottom of a bowl. Arrange the sliced steak, roasted chickpeas, cherry tomatoes, diced cucumber, red onion, kalamata olives, and feta cheese over the grains. Drizzle the tzatziki sauce and vinaigrette over the top.
Notes
