- 1 bag frozen tater tots
- 1 pound ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- Chopped green onions (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the ground beef or turkey in a large skillet over medium heat until browned, about 5-7 minutes. Drain excess fat.
- Stir in the taco seasoning, black beans, corn, and salsa. Cook for 2-3 minutes until heated through.
- Spread the meat mixture evenly in a greased casserole dish.
- Top with frozen tater tots in a single layer.
- Bake in the preheated oven for 25-30 minutes until the tater tots are golden brown.
- Remove from the oven and sprinkle with shredded cheese.
- Return to oven for 5-7 minutes until cheese is melted.
- Serve warm, topped with sour cream and green onions.
Notes
Feel free to customize with additional ingredients like bell peppers or jalapeños. Make ahead by pre-cooking the filling and refrigerating overnight.
