Description

Delightful pastries with a flaky crust, rich cream filling, and a vibrant mix of fresh berries.


Ingredients

Scale
  • 1 sheet puff pastry, thawed (about 8 oz / 225g)
  • 1 egg (for egg wash)
  • 1 tbsp water
  • 1 cup whole milk (240 ml)
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface, gently stretching it without tearing, and cut it into 8 equal squares.
  3. Score a smaller square inside each one, being careful not to cut all the way through.
  4. Prick the center of each square with a fork to allow steam to escape.
  5. Whisk the egg with water and brush this mixture on the edges of each square.
  6. Bake for 15–18 minutes, until golden brown.
  7. In a saucepan over medium heat, whisk together milk, sugar, cornstarch, and egg yolks until thickened.
  8. Stir in vanilla extract and butter.
  9. Once the pastries have cooled slightly, press the center of each to create a well and fill with the cream.
  10. Top with mixed berries and dust with powdered sugar before serving.

Notes

Make the cream filling and puff pastry in advance; store them separately in the refrigerator.
