Ingredients

- 1 sheet puff pastry, thawed (about 8 oz / 225g)
- 1 egg (for egg wash)
- 1 tbsp water
- 1 cup whole milk (240 ml)
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- 2 egg yolks
- 1 tsp vanilla extract
- 1 tbsp unsalted butter
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a floured surface, gently stretching it without tearing, and cut it into 8 equal squares.
- Score a smaller square inside each one, being careful not to cut all the way through.
- Prick the center of each square with a fork to allow steam to escape.
- Whisk the egg with water and brush this mixture on the edges of each square.
- Bake for 15–18 minutes, until golden brown.
- In a saucepan over medium heat, whisk together milk, sugar, cornstarch, and egg yolks until thickened.
- Stir in vanilla extract and butter.
- Once the pastries have cooled slightly, press the center of each to create a well and fill with the cream.
- Top with mixed berries and dust with powdered sugar before serving.
Notes
Make the cream filling and puff pastry in advance; store them separately in the refrigerator.
