Description

Deliciously chewy oatmeal raisin bars with a rich, buttery flavor and the warm aroma of cinnamon, perfect for any occasion.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup raisins
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare your 8×8 inch baking dish by lining it with parchment paper.
  2. Cream the softened butter with the brown sugar and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until smooth and creamy.
  4. Whisk together rolled oats, flour, baking soda, cinnamon, and salt in another bowl.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Fold in the raisins with care.
  7. Spread the batter evenly in the prepared baking dish.
  8. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  9. Allow to cool for at least 15 minutes before cutting into bars.

Notes

Feel free to customize with nuts, coconut flakes, or chocolate chips. Make-ahead: Prepare batter a day in advance and refrigerate.
