Instructions
- Preheat your oven to 425°F (220°C).
- Roll out the pie crust onto a lightly floured surface and fit it into your pie dish.
- Combine the cherry filling, sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl.
- Pour the cherry mixture into the pie crust.
- Dot the filling with pieces of butter, if desired.
- Cover with a second pie crust, crimping the edges to seal, and cut slits in the top crust.
- Brush the top crust with egg wash for a glossy finish.
- Bake for 30-35 minutes until the crust is golden brown and the filling bubbles.
