Description

A creamy, comforting Southern tomato gravy perfect for smothering biscuits, fried chicken, and more.


Ingredients

  • 3 tablespoons butter or bacon grease
  • 3 tablespoons all-purpose flour
  • 1 small yellow onion, chopped
  • 1 (15 oz) can fire-roasted diced tomatoes
  • 1/4 cup heavy cream or whole milk (optional)
  • 1/4 cup chicken or vegetable stock
  • Salt and freshly cracked black pepper to taste
  • Hot sauce, a few dashes (optional)

Instructions

  1. Melt the butter or bacon grease in a heavy-bottomed skillet over medium heat until it bubbles.
  2. Add the chopped onions and sauté gently until they turn translucent and fragrant, about 3-5 minutes.
  3. Sprinkle the flour directly over the onions and whisk continuously for one minute to form a light roux.
  4. Pour in the fire-roasted diced tomatoes and stock, stirring well to blend.
  5. Let the mixture simmer for about 5 minutes to meld the flavors.
  6. If desired, add the heavy cream or milk now, stirring until smooth and creamy.
  7. Season generously with salt, black pepper, and hot sauce to taste.
  8. Serve hot over biscuits, fried chicken, or grilled vegetables.

Notes

Store leftover gravy in an airtight container in the fridge for up to three days or freeze for up to three months. Reheat gently on the stove with a splash of broth if needed.
