Description
A classic dessert with layers of flaky puff pastry surrounding a creamy vanilla custard, topped with a zesty passionfruit glaze.

- 1 cup milk
- 2 cups cream
- 1 cup sugar
- 1/2 cup cornstarch
- 4 egg yolks
- 1 tsp vanilla extract
- 1/4 cup passionfruit pulp
- 1/2 cup icing sugar
- 1 sheet of puff pastry
Instructions
- Preheat your oven to 200°C (390°F).
- Prepare the puff pastry by rolling it out and lining your baking dish. Bake for 15-20 minutes until golden and crisp.
- Mix the milk, cream, and sugar in a medium saucepan and heat over medium until sugar dissolves.
- Combine cornstarch and egg yolks in another bowl until smooth, then temper with the warm milk mixture.
- Cook the mixture in the saucepan over low heat, stirring continuously until thickened, about 5 minutes.
- Add vanilla extract to the custard and pour it over the baked pastry.
- Cool the Vanilla Slice to room temperature, then refrigerate for at least 2 hours.
- Make the glaze by mixing passionfruit pulp with icing sugar, then spread it over the chilled custard.
Notes
Serve with coffee, fresh berries, or whipped cream. Store in the refrigerator for up to 4 days.
