Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved baby potatoes with olive oil, garlic powder, salt, and pepper in a large bowl.
  3. Spread the potatoes out in a single layer on a baking sheet.
  4. Season the chicken breasts with salt and pepper.
  5. Place the chicken on the baking sheet with the potatoes.
  6. Drizzle balsamic vinegar over the chicken and potatoes.
  7. Bake for 20 minutes.
  8. Add the green beans to the baking sheet and toss everything together.
  9. Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through.
  10. Serve warm, garnished with fresh parsley if desired.
