  • 2 pounds smoked sausage, sliced into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 12 ounces diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 teaspoon pepper
  • 8 ounces dry whole wheat bow tie pasta
  • 2 cups shredded cheddar cheese

Instructions

  1. Start by slicing your smoked sausage into bite-sized pieces.
  2. In a large pot or Dutch oven, pour the olive oil and set it over medium heat. Add the chopped onions and sausage, sautéing them together until the onions soften and the sausage develops a golden-brown crust.
  3. Next, stir in the minced garlic and sauté for about 30 seconds.
  4. Pour in the chicken broth, followed by the diced tomatoes (with their juice), heavy cream, and pepper. Stir well to combine.
  5. Add the dry whole wheat bow tie pasta to the pot, ensuring it is submerged in the liquid mixture. Cover the pot, and let it simmer for 15 to 20 minutes, stirring occasionally.
  6. When the pasta is just right, remove from heat and stir in one cup of shredded cheddar cheese until melted.
