Description

A hearty and vibrant pepper soup that warms the heart with its rich flavors and comforting heat.


Ingredients

Scale
  • 1 lb of tender meat (chicken, goat, or beef)
  • 2 cups of water or broth
  • 23 cups of bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 12 tablespoons of ginger, grated
  • 12 tablespoons of spicy pepper (cayenne or habanero), to taste
  • 1 teaspoon of thyme
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Fresh herbs for garnish (parsley or cilantro)

Instructions

  1. Sauté the chopped onion and minced garlic in olive oil over medium heat until fragrant.
  2. Add grated ginger and cook for another minute.
  3. Incorporate the tender meat, stirring occasionally until browned.
  4. Pour in the water or broth and add the chopped bell peppers.
  5. Season generously with spicy pepper, thyme, salt, and pepper to taste.
  6. Bring to a boil, then reduce heat to simmer gently.
  7. Allow to simmer for 20-30 minutes until the meat is tender.
  8. Adjust seasoning if needed, top with fresh herbs, and serve hot.

Notes

For a vegetarian version, substitute meat with mushrooms or tofu and use vegetable broth.
