Description

A delightful combination of sweet and savory with tender chicken, caramelized pineapple, and fluffy rice, perfect for family gatherings and special occasions.

Ingredients

Scale
  • 1 lb chicken breasts
  • 1 cup rice
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon garlic
  • 1 tablespoon ginger
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as cilantro or parsley)
  • Lime wedges for serving

Instructions

  1. Heat the oil: In a large skillet, heat the olive oil over medium heat. Wait until shimmering before adding the chicken.
  2. Cook the chicken: Season the chicken breasts generously with salt and pepper. Place them in the skillet and cook for about 6-7 minutes per side until golden brown and cooked through. Remove from heat and set aside.
  3. Sauté aromatics: In the same skillet, add the minced garlic, ginger, and brown sugar. Stir for about 1-2 minutes until fragrant, allowing those incredible flavors to meld.
  4. Add the pineapple: Incorporate the pineapple chunks and pour in the soy sauce. Cook for another 3-4 minutes, letting the sauce thicken slightly and envelop the pineapple.
  5. Combine with rice: Stir in the cooked rice, ensuring every grain is coated in that enticing sauce.
  6. Return the chicken: Slice the cooked chicken and return it to the pan, mixing everything thoroughly until combined.
  7. Serve & garnish: Scoop onto plates and garnish with fresh herbs, offering lime wedges on the side for a burst of citrus flavor.

Notes

Make-ahead is possible, and the dish holds well for meal prep. Store chicken and rice separately.
