Description

Light and flaky breakfast puffs filled with sausage, eggs, and cheese, perfect for a cozy brunch or quick weekday meal.


Ingredients

  • 1 package of puff pastry sheets
  • 1 cup cooked sausage, crumbled
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar, mozzarella, or pepper jack)
  • Salt and pepper to taste
  • 1 egg for egg wash

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry sheets on a lightly floured surface and cut them into 4-inch squares.
  3. Whisk together the eggs in a medium bowl until combined, light, and frothy.
  4. Stir in the cooked sausage and shredded cheese, seasoning with salt and pepper.
  5. Place a spoonful of the mixture at the center of each pastry square.
  6. Fold over to enclose the filling, sealing the edges tightly.
  7. Brush the tops with beaten egg.
  8. Bake for 15-20 minutes until golden brown.

Notes

For an extra touch, sprinkle some herbs like chives or parsley on top before serving. Store in an airtight container for 3-4 days in the fridge or freeze for up to a month.
