- 2 large eggs
- ½ cup whole milk
- ¼ cup olive oil
- 2 tbsp plain Greek yogurt or sour cream
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ¼ tsp garlic powder
- ¾ cup shredded mozzarella cheese
- ⅓ cup chopped sun-dried tomatoes (in oil, drained)
- ¼ cup chopped fresh basil
- Optional: Pinch of black pepper or red pepper flakes
Instructions
- Preheat your oven to a cozy 350°F (175°C) and grease an 8×4-inch loaf pan with parchment paper.
- Mix the eggs, milk, olive oil, and yogurt together in a large mixing bowl until smooth.
- Combine the flour, baking powder, salt, and garlic powder in another bowl.
- Fold the dry ingredients into the wet mixture until just combined, then add the mozzarella, sun-dried tomatoes, and basil.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 40-45 minutes, or until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Serve warm as a side to soups or enjoy toasted with butter. This bread can also be made ahead and stored in the fridge before baking.
