Description

A delightful loaf that combines the vibrant flavors of Caprese salad with the comforting texture of freshly baked bread.


Ingredients

  • 2 large eggs
  • ½ cup whole milk
  • ¼ cup olive oil
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup chopped sun-dried tomatoes (in oil, drained)
  • ¼ cup chopped fresh basil
  • Optional: Pinch of black pepper or red pepper flakes

Instructions

  1. Preheat your oven to a cozy 350°F (175°C) and grease an 8×4-inch loaf pan with parchment paper.
  2. Mix the eggs, milk, olive oil, and yogurt together in a large mixing bowl until smooth.
  3. Combine the flour, baking powder, salt, and garlic powder in another bowl.
  4. Fold the dry ingredients into the wet mixture until just combined, then add the mozzarella, sun-dried tomatoes, and basil.
  5. Pour the batter into the loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until golden and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve warm as a side to soups or enjoy toasted with butter. This bread can also be made ahead and stored in the fridge before baking.
