- 1/4 cup brown sugar, packed

- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for rolling)
- 2 teaspoons ground cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easy baking.
- Whisk together the flour, baking powder, baking soda, and salt until well combined.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Beat in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Mix the granulated sugar and cinnamon for rolling.
- Scoop tablespoon-sized portions of dough, roll them into balls, and coat in the cinnamon sugar mixture.
- Place the cookie dough balls on the prepared baking sheet, leaving about 2 inches of space between each one.
- Bake for 10-12 minutes until the edges are lightly golden but the centers remain soft.
- Cool on the pan for a few minutes before transferring to a wire rack to cool completely.
