Description

A vibrant and flavorful slaw featuring a medley of crisp vegetables, tangy dressing, and a kick of spice from jalapeños.

Ingredients

Scale
  • 1 medium green cabbage, shredded
  • 2 large carrots, grated
  • 1 red bell pepper, thinly sliced
  • 1 jalapeño, seeded and minced
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced red bell pepper, and minced jalapeño. Toss gently to mix all ingredients evenly.
  2. Whisk the dressing: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, lime juice, and sugar until smooth and creamy.
  3. Combine: Pour the prepared dressing over the vegetable mix. Gently toss everything together until the dressing coats the vegetables.
  4. Season: Taste and add salt and pepper according to your preference.
  5. Rest: Cover your slaw and chill in the refrigerator for at least 30 minutes.

Notes

This slaw can be made in advance; the flavors deepen as it sits. For a twist, you can grill the vegetables lightly before mixing them into the slaw.
