Description
An indulgent meatloaf stuffed with creamy mac and cheese, wrapped in crispy bacon, and glazed with maple BBQ sauce.

- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 cup macaroni
- 1 cup shredded cheese (cheddar or similar)
- 1/2 cup cream
- 8 slices of bacon
- 1/2 cup maple BBQ sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the ground beef, ground pork, breadcrumbs, egg, diced onion, minced garlic, salt, and pepper in a large bowl.
- Cook the macaroni according to package directions until al dente. Drain and return it to the pot. Stir in the shredded cheese and cream.
- Press half of the meat mixture into a loaf shape at the bottom of a lightly greased baking dish, creating a well in the center.
- Fill the well with the creamy mac and cheese mixture.
- Cover the mac and cheese with the remaining meat mixture, sealing it completely.
- Wrap the loaf with bacon slices.
- Brush liberally with maple BBQ sauce.
- Bake for about 1 hour or until the bacon crisps up and the meat is cooked through.
- Rest the loaf for a few minutes before slicing.
Notes
You can prepare and refrigerate the meatloaf overnight before baking. For a lighter option, substitute ground turkey.
