Description

An indulgent meatloaf stuffed with creamy mac and cheese, wrapped in crispy bacon, and glazed with maple BBQ sauce.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup macaroni
  • 1 cup shredded cheese (cheddar or similar)
  • 1/2 cup cream
  • 8 slices of bacon
  • 1/2 cup maple BBQ sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the ground beef, ground pork, breadcrumbs, egg, diced onion, minced garlic, salt, and pepper in a large bowl.
  3. Cook the macaroni according to package directions until al dente. Drain and return it to the pot. Stir in the shredded cheese and cream.
  4. Press half of the meat mixture into a loaf shape at the bottom of a lightly greased baking dish, creating a well in the center.
  5. Fill the well with the creamy mac and cheese mixture.
  6. Cover the mac and cheese with the remaining meat mixture, sealing it completely.
  7. Wrap the loaf with bacon slices.
  8. Brush liberally with maple BBQ sauce.
  9. Bake for about 1 hour or until the bacon crisps up and the meat is cooked through.
  10. Rest the loaf for a few minutes before slicing.

Notes

You can prepare and refrigerate the meatloaf overnight before baking. For a lighter option, substitute ground turkey.
