Description

An enchanting fusion of soft cake, creamy cheesecake, and bright slices of strawberries that create a delightful dessert.


Ingredients

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 cup strawberries, sliced
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking sheet and line it with parchment paper.
  2. Sift together the flour, baking powder, and salt in a bowl.
  3. Beat the eggs and granulated sugar together in another bowl until pale and fluffy, then stir in the vanilla extract.
  4. Fold the flour mixture into the egg mixture using a spatula or wooden spoon until just combined.
  5. Spread the batter evenly on the prepared baking sheet and bake for 10-12 minutes until golden and springy.
  6. Let it cool slightly, then carefully roll it up with the parchment paper while still warm and cool completely in this shape.
  7. Mix the cream cheese and powdered sugar until smooth and creamy.
  8. Whip the heavy cream separately until stiff peaks form, then gently fold it into the cream cheese mixture.
  9. Unroll the cooled cake and spread the cheesecake filling evenly over the surface. Toss the sliced strawberries with lemon juice and arrange them on top.
  10. Roll the cake back up without parchment and refrigerate for at least an hour before slicing. Serve chilled.
