Instructions
- Preheat your oven to 350°F (175°C). Grease a baking sheet and line it with parchment paper.
- Sift together the flour, baking powder, and salt in a bowl.
- Beat the eggs and granulated sugar together in another bowl until pale and fluffy, then stir in the vanilla extract.
- Fold the flour mixture into the egg mixture using a spatula or wooden spoon until just combined.
- Spread the batter evenly on the prepared baking sheet and bake for 10-12 minutes until golden and springy.
- Let it cool slightly, then carefully roll it up with the parchment paper while still warm and cool completely in this shape.
- Mix the cream cheese and powdered sugar until smooth and creamy.
- Whip the heavy cream separately until stiff peaks form, then gently fold it into the cream cheese mixture.
- Unroll the cooled cake and spread the cheesecake filling evenly over the surface. Toss the sliced strawberries with lemon juice and arrange them on top.
- Roll the cake back up without parchment and refrigerate for at least an hour before slicing. Serve chilled.
