- 1 cup strawberries, pureed
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 1/2 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 package gelatin
- 3 eggs
- 1/2 cup flour
- 1/4 cup butter, melted
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the batter: In a large bowl, whisk together the eggs and sugar until light and fluffy. Gradually fold in the flour and melted butter, then pour into the prepared cake pan and bake for 20-25 minutes.
- Whip the cream: In a separate bowl, whip the heavy cream until soft peaks form, then fold in the vanilla extract and sugar.
- Prepare the mousse: Dissolve the gelatin in warm strawberry puree and mix it into the whipped cream gently.
- Layer your dessert: Slice the cooled sponge cake in half, layer mousse on top, and chill for at least 4 hours.
- Glaze and garnish: Pour more strawberry puree over the top and decorate with fresh strawberries.
