- 4 cups chopped peppers (red, green, or a mix)
- 1 cup apple cider vinegar
- 1 cup water
- 1 cup erythritol or another sugar substitute
- 1 tablespoon pectin
- 1 teaspoon salt
Instructions
- Combine the chopped peppers, apple cider vinegar, water, and erythritol in a large pot.
- Bring the mixture to a boil over medium heat, stirring often.
- Add the pectin and salt, mixing thoroughly to dissolve the pectin.
- Reduce the heat and let it simmer for about 10-15 minutes, stirring occasionally.
- Pour the hot jam into sterilized jars, filling them to within a half-inch from the top.
- Allow the jars to cool completely before storing them in the refrigerator.
Notes
Add minced garlic or diced ginger for an extra kick. Ensure jars are sealed tightly for best storage.
