Description

A vibrant salad bowl packed with nutrients, featuring kale, blueberries, grapes, dried cherries, and quinoa, topped with a creamy dressing.


Ingredients

Scale
  • 2 cups kale, chopped
  • 1 cup blueberries
  • 1 cup grapes, halved
  • 1/2 cup dried cherries
  • 1 cup quinoa, cooked
  • 1/4 cup creamy dressing (yogurt or tahini-based)
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions. Once done, fluff it with a fork and let it cool.
  2. In a large bowl, combine chopped kale, blueberries, halved grapes, and dried cherries.
  3. Add the cooled quinoa to the bowl.
  4. In a small bowl, whisk together your chosen creamy dressing, lemon juice, salt, and pepper until combined.
  5. Toss the salad with the dressing until everything is well coated.
