Description

A vibrant, zesty cake bursting with fresh berries and lemon flavor, perfect for summer celebrations.


Ingredients

  • 1 box lemon cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon zest
  • Whipped cream for topping
  • Fresh berries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking pan.
  3. Combine the lemon cake mix, water, vegetable oil, and eggs in a mixing bowl and mix until smooth.
  4. Fold in the mixed berries and lemon juice carefully.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 25-30 minutes.
  7. Mix powdered sugar with lemon zest and juice for glaze after cooling.
  8. Top with whipped cream and fresh berries before serving.
