Description

A delightful and moist pineapple juice cake, perfect for any occasion, enriched with tropical flavors and topped with a sweet glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup pineapple juice
  • 3/4 cup vegetable oil
  • 1 tsp vanilla extract
  • Powdered sugar and pineapple juice for glaze

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the bundt pan by greasing and flouring it.
  3. Mix dry ingredients in a large bowl.
  4. Add wet ingredients to the dry mixture and stir until smooth.
  5. Pour the batter into the prepared bundt pan.
  6. Bake for 40-45 minutes until a toothpick comes out clean.
  7. Cool the cake in the pan for 10-15 minutes before inverting onto a cooling rack.
  8. Make the glaze by whisking powdered sugar, pineapple juice, and vanilla extract until smooth.
  9. Drizzle the glaze over the cooled cake.

Notes

For added flavor, consider using coconut oil instead of vegetable oil. Improves in taste when baked a day in advance.
