- 1 medium fresh pineapple, peeled, cored, and diced (about 4 cups)
- 1 1/2 cups granulated sugar
- 3/4 cup apple cider vinegar
- 1 1/2 teaspoons red pepper flakes
- 1/2 teaspoon ground ginger
- Fresh mint leaves, chopped (optional)
Instructions
- Combine the diced pineapple with granulated sugar in a large mixing bowl. Let it sit for about an hour.
- Transfer the pineapple mixture into your heavy-bottomed saucepan. Add apple cider vinegar, red pepper flakes, and ground ginger, stirring gently.
- Heat the mixture over medium heat, stirring occasionally, cooking for 30 to 40 minutes until thickened.
- Remove from heat and allow it to cool to room temperature.
- Pour the cooled candy into clean, airtight jars and seal them tightly. Optionally, top with chopped mint leaves.
Notes
Make this candy ahead of time as it improves in flavor over time. Use different spices for customization.
