Ingredients

Scale
  • 4 cups fresh pineapple chunks
  • 1 cup granulated sugar
  • ½ cup apple cider vinegar
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Create the syrup: In a large mixing bowl, combine sugar, apple cider vinegar, cayenne pepper, cinnamon, vanilla extract, and salt. Whisk until smooth.
  2. Fold in the pineapple chunks, ensuring they are coated with the syrup.
  3. Cook the mixture in a saucepan over medium heat for 10-15 minutes, stirring frequently, until syrup thickens.
  4. Cool and store in a sterilized jar and refrigerate for a few hours to develop flavors.

Notes

Try adding a splash of rum or lime zest for a personalized twist. It can be stored in the refrigerator for up to 2 weeks.
