Description

A comforting and customizable Taco Rice Bowl filled with seasoned beef, vibrant veggies, and creamy toppings.


Ingredients

  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice (white or brown)
  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado (sliced)
  • Sour cream (for topping)
  • Salsa (for topping)

Instructions

  1. In a skillet over medium heat, cook the ground beef until fully browned—about 5 to 7 minutes—while breaking it apart with a spatula.
  2. Drain the excess fat as needed.
  3. Stir in the taco seasoning and a splash of water (as specified in the packet instructions). Let it simmer for a few minutes.
  4. In a large bowl, combine the cooked rice, seasoned meat, black beans, corn, and diced tomatoes.
  5. Mix well and then serve the blend into individual bowls.
  6. Top each bowl with lettuce, cheese, avocado, sour cream, and salsa.
  7. Serve warm and enjoy!
