- 4 pounds beef brisket
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons brown sugar
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a large Dutch oven over medium-high heat.
- Season the brisket generously with salt and pepper.
- Sear the brisket on both sides until browned, about 4–5 minutes per side.
- Remove the brisket and set aside.
- Add onions and garlic to the pot and cook until softened.
- Stir in beef broth, red wine, tomato paste, brown sugar, Worcestershire sauce, and thyme.
- Return the brisket to the pot, cover, and transfer to the oven.
- Cook for about 4 hours, or until the meat is tender.
- Let rest before slicing and serving with the sauce.
Notes
For deeper flavors, prepare a day in advance and refrigerate overnight. You can substitute red wine with white wine or beer and beef broth with vegetable broth.
