Description

A comforting dish featuring plump tortellini nestled in a creamy Alfredo sauce with vibrant broccoli.


Ingredients

  • 8 oz cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Optional: cooked chicken, steak, or seafood

Instructions

  1. Cook the tortellini: Bring a large pot of salted water to a rolling boil. Add the tortellini and cook according to package instructions, about 3-5 minutes for fresh pasta. Drain and set aside, reserving a splash of pasta water.
  2. Melt the butter: In a large skillet over medium heat, melt the butter until it bubbles gently.
  3. Sauté the garlic: Add minced garlic and sauté for 30 seconds until fragrant.
  4. Incorporate heavy cream: Pour in heavy cream, raise heat slightly, and bring to a gentle simmer.
  5. Stir in the Parmesan: Whisk in grated Parmesan cheese until smooth. Season with salt and pepper.
  6. Add the broccoli: Toss in broccoli florets and cook for 2-3 minutes until bright green and tender.
  7. Combine the tortellini: Add cooked tortellini to the sauce, gently tossing to coat. Add reserved pasta water if sauce is too thick.
  8. Serve warm: Ladle into bowls and add optional toppings like chicken or shrimp.

Notes

To make ahead, prepare the sauce separately. This dish can also be customized with different proteins or vegetables.
