- 4 chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup spinach
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Heat the oil in a large skillet over medium heat until shimmering.
- Season the chicken breasts with salt and pepper, then add to the skillet. Cook for 6-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- Sauté the garlic in the same skillet for about 1 minute until fragrant.
- Pour in the heavy cream and add the Parmesan cheese, stirring until melted and thickened.
- Add the spinach and dried herbs, cooking until wilted.
- Return the chicken to the skillet, spooning sauce over it, and let simmer for 2-3 minutes.
- Serve hot with your choice of side.
