- 4 large russet potatoes
- 1/2 cup butter
- 1 cup sour cream
- 2 cups shredded cheese (cheddar works well)
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the russet potatoes on a baking sheet for about 1 hour or until tender.
- Once the potatoes cool, cut them in half and scoop out the insides into a large bowl.
- Mash the potato insides with butter, sour cream, and half the shredded cheese until creamy.
- Stir in the crumbled bacon, green onions, and season with salt and pepper.
- Spoon the mixture back into the potato skins, topping with the remaining cheese.
- Place back in the oven and bake at 375°F (190°C) for 15-20 minutes, until cheese is bubbly and golden brown.
- Serve warm with your favorite sides.
Notes
Customize by substituting Greek yogurt for sour cream or adding garlic powder for extra flavor.
