Description

A creamy, buttery casserole made with russet potatoes, sour cream, cheddar cheese, and crispy bacon, perfect for gatherings.


Ingredients

  • 4 large russet potatoes
  • 1/2 cup butter
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar works well)
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the russet potatoes on a baking sheet for about 1 hour or until tender.
  3. Once the potatoes cool, cut them in half and scoop out the insides into a large bowl.
  4. Mash the potato insides with butter, sour cream, and half the shredded cheese until creamy.
  5. Stir in the crumbled bacon, green onions, and season with salt and pepper.
  6. Spoon the mixture back into the potato skins, topping with the remaining cheese.
  7. Place back in the oven and bake at 375°F (190°C) for 15-20 minutes, until cheese is bubbly and golden brown.
  8. Serve warm with your favorite sides.

Notes

Customize by substituting Greek yogurt for sour cream or adding garlic powder for extra flavor.
