- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained

- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup mixed greens (optional)
- Feta cheese (optional, for topping)
Instructions
- Create the Tzatziki Sauce: In a large bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, and a sprinkle of salt and pepper. Stir well.
- Incorporate the Chicken: Add the shredded rotisserie chicken to the tzatziki base and fold it in carefully.
- Add Fresh Vegetables: Mix in the halved cherry tomatoes and thinly sliced red onion.
- Layering the Salad: If using, place mixed greens at the bottom of a serving bowl and spoon the tzatziki chicken salad on top.
- Finish with Feta: Crumble feta cheese over the top.
- Serve Chilled: Allow the salad to chill in the fridge before serving.
Notes
Tip: Drain excess liquid from the grated cucumber to prevent the salad from becoming too watery.
