Description

A refreshing and satisfying chicken salad with creamy tzatziki sauce, fresh vegetables, and packed with flavors.


Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup mixed greens (optional)
  • Feta cheese (optional, for topping)

Instructions

  1. Create the Tzatziki Sauce: In a large bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, and a sprinkle of salt and pepper. Stir well.
  2. Incorporate the Chicken: Add the shredded rotisserie chicken to the tzatziki base and fold it in carefully.
  3. Add Fresh Vegetables: Mix in the halved cherry tomatoes and thinly sliced red onion.
  4. Layering the Salad: If using, place mixed greens at the bottom of a serving bowl and spoon the tzatziki chicken salad on top.
  5. Finish with Feta: Crumble feta cheese over the top.
  6. Serve Chilled: Allow the salad to chill in the fridge before serving.

Notes

Tip: Drain excess liquid from the grated cucumber to prevent the salad from becoming too watery.
